Dear Prospective Employer,
Thank you for your interest in supporting our students' education. The experience of Externship provides our students with the opportunity to apply the technical skills learned in the classroom environment to a real world setting, to grow their professional network, and to gain experience conducting a professional job search. Externship is a required class. Students must work 15 consecutive weeks and a minimum of 600 hours at one establishment which has been approved to accept Externs. Students begin the class of Externship at multiple times throughout the year, and have a pre-defined time period in which to complete their 15 weeks and 600 minimum hours.
Applying to Become an Approved Site
After completing this form, you will be required to submit the following materials. THESE ITEMS ARE REQUIRED. APPLICATIONS WILL NOT BE REVIEWED WITHOUT THESE ADDITIONAL MATERIALS:
- A link to a short video tour of your kitchen and dining room (approx. 1 minute). The link should be to YouTube or other public video hosting service.
We suggest a
walk-through beginning at the front door, moving through the dining room, and
proceeding to the kitchen (including the pass, the line, the dish area, prep
kitchen, and receiving area). The tour provides our faculty and our students a
better understanding of the size and scope of your establishment. Please upload
the video to YouTube or similar video-sharing website, and include the link in
the field provided on the application. We do not expect or need
professional-quality video and narration, yet this will be the main visual
connection our faculty and students will have to your establishment.
- Executive Chef's and/or Executive Pastry Chef's (as appropriate) résumé or bio
- Other promotional materials (press kit, articles, reviews, etc.) as appropriate
A review committee consisting of Faculty and Administration will consider your application only after all information has been submitted. The committee meets every three weeks, and the Career Services team will provide feedback from the committee following the meeting.
The following criteria serve as guidelines in the consideration of your application:
- The establishment has been open for at least ONE YEAR
- The Executive Chef or Pastry Chef (as appropriate) has FIVE YEARS of management experience
- Menus reflect the use of basic fundamentals of cooking/baking
- The establishment's plan for the Extern's experience provides opportunities for rotation, growth, and increased learning

The Career Services Team
The United States Department of Labor has outlined six criteria which must be met in order to legally offer an unpaid internship. These criteria are:
- The internship, even though it includes actual operation of the facilities of the employer, is similar to training which would be given in an educational environment;
- The internship experience is for the benefit of the intern;
- The intern does not displace regular employees, but works under close supervision of existing staff;
- The employer that provides the training derives no immediate advantage from the activities of the intern; and on occasion its operations may actually be impeded;
- The intern is not necessarily entitled to a job at the conclusion of the internship; and
- The employer and the intern understand that the intern is not entitled to wages for the time spent in the internship.
